as long as you charge them properly, and they to dont to to much of a stain on them they wont catch fire. lipos start to puff up once you notice its puffing up a lot dont you is any more. but if you take care of the battery you should be fine...
Yes, as dizzyinzo said, as long as you take care of them you should be fine. However, it is possible for lipos to catch fire while charging - this may be common sense but do not charge them by anything flammable and never leave them unoccupied while charging or this could happen:

If you want to be cautious, they have battery "bunkers" such as the Liposack to use while charging lipos like Jeremy suggests here:

So from what I know and hear, they don't explode from being old necessarily but from inproper care and charging/discharging.
also it is best to have a lipo charger with a cell balance er to make sure each cell is charging properly
balancing the cells every time you charge the falls under that category of taking care of the lipo. so if you dont ballance charge them one will have more Volts then the other and when you charge it again on will full up quicker then the other but the charger will keep charging and it will go "BOOM"
plain and simple, basically all ya gotta do is balance and use the right charger, but after a while, i think you have to get rid of them, just read the instructions that came with ur battery
they can explode from impact damage, like if you were to take a jump and land on a rock on the battery and if it ruptured it could explode. also if you were to accidentally short the cells it could go boom.
if you are realy afraid, try to fit the battery in with a lipopouch so you willhave no chance of having you car catch in flames
